Interesting facts about the oyster mushroom
Oyster mushrooms (Pleurotus ostreatus) are fast-growing, robust mushrooms with tender, aromatic flesh. They thrive on many organic substrates and are also very suitable for beginners.
Advantages of home breeding
-
Freshness and quality : Mushrooms straight from home, crisp and freshly harvested.
-
Independence : No seasonal dependency, available at any time.
-
Sustainability : In-house production using residual materials.
What do I need?
a) Substrat
-
Straw pellets (wheat/rye) or chopped, pasteurized straw
-
Alternatively: coffee grounds, sawdust (beech/oak), paper, cardboard
b) Additions
-
Bran or gypsum (optional, for higher yields)
c) Accessories
-
Large plastic bags/pouches (with filter) or buckets with holes
-
Large container for substrate preparation
-
spray bottle
d) Oyster mushroom liquid mycelium

Step-by-step instructions
Step 1: Substrate preparation
-
Processing straw :
-
Chop the straw into 5-10 cm pieces.
-
Pasteurize in hot water (65–80°C) for approximately 1–2 hours.
-
Drain well and bring to approximately 65–70% moisture content.
-
-
Alternatively, use straw pellets :
-
Pour approximately 2.5 liters of boiling water over 1 kg of pellets.
-
Allow the pellets to soak for about 1 hour, then loosen them and let them cool.
-
-
Mix substrate :
-
Optionally mix in 5–10% bran (promotes growth).
-
Step 2: Vaccination (Inoculation)
-
Place the cooled substrate onto a large, clean work surface.
-
Shake Mykoport liquid mycelium well.
-
For every 3–5 kg of substrate, work in approximately 20–50 ml of liquid mycelium evenly.
-
-
Mix everything thoroughly – the better distributed, the faster the mycelium will grow.

Step 3: Filling and sealing
-
Fill the inoculated substrate firmly into suitable filter bags or buckets (avoid air pockets).
-
Seal the bag, leaving the filter area open for air exchange, or drill holes (approx. 1–2 cm in diameter) in the bucket.
Step 4: Colonization phase (incubation)
-
Temperature: 18–24°C
-
Light: No light is needed (mycelium also grows in the dark)
-
Duration: 10–21 days (depending on temperature and mycelium quality)
-
Humidity: 70–80%
-
Note: The substrate should be uniformly white before fruiting is initiated.
Step 5: Initiate fertilization
-
Light : 8–12 hours of daylight or artificial light per day (no direct sunlight!).
-
Temperature: 12–18°C
-
Humidity: 85–95%
-
Fresh air: Ventilate at least twice a day (oyster mushrooms are sensitive to CO2).
-
Open the bags in several places or cut "crosses" into them so that the mushrooms can escape.
-
Spray regularly with water , but avoid waterlogging.
Step 6: Harvest
-
Timing: When the mushroom caps are approximately 5–15 cm in size and still slightly curved downwards.
-
Harvest: Carefully twist out or cut off the entire bunch.
-
Note: After harvesting, the substrate can provide 1–2 further flushes (after a short resting and moistening phase).
Tips, tricks & sources of error
-
Mold prevention : Clean working practices and thorough pasteurization are crucial.
-
Small mushrooms, long stems? Usually too little fresh air – ventilate more often!
-
No fruiting bodies? Check temperature, humidity and light – or use fresh liquid mycelium.
-
Dry hats? Aim for higher humidity, spray more often.
FAQ: Frequently Asked Questions
Can I use coffee grounds?
Yes, oyster mushrooms also thrive on coffee grounds. Mix them with some straw for better structure.
How do I store liquid mycelium?
Store in the refrigerator (2–6°C), do not freeze.
How much mycelium do I need?
For 5 kg of substrate, we recommend 20–50 ml of liquid mycelium.
