The Velvet Shank (Flammulina velutipes), also known as Enoki, is a popular edible mushroom with a delicate, mild flavor and tender texture. Its long, slender stems and small, light-colored caps, familiar from Asian cuisine, are characteristic. In nature, it grows primarily during the colder months, making it a true winter mushroom. This product provides you with high-quality Flammulina velutipes mycelium for cultivating this special edible mushroom at home.
Shelf life
The supplied mycelium can be stored for approximately 2–4 weeks in the refrigerator (2–6 °C). Until use, it should always be stored in a cool, dry place, protected from light.
Fruiting
Once the substrate is completely colonized, the velvet shank mushroom begins fruiting under suitable conditions. The first mushrooms usually appear 10–21 days after the onset of fruiting. Limited light and a quiet environment are beneficial for developing the characteristic long stems.
Fertilization temperature
The optimal temperature for fruiting body formation is between 10 and 18 °C. The common velvet shank mushroom fruits particularly reliably at cooler temperatures and is therefore ideally suited for cultivation in autumn and winter.
Mycel
The Flammulina velutipes mycelium forms a fine, white, uniformly growing network of threads. It reliably colonizes hardwood substrates such as beech, poplar, or willow, as well as enriched sawdust.
Reproduction temperature
Temperatures between 22 and 26 °C are optimal for colonization of the substrate. Within this range, the mycelium grows quickly and vigorously.

Special features / tips
The velvet shank mushroom prefers cool fruiting conditions and is sensitive to high temperatures. For particularly delicate, pale fruiting bodies, the amount of light can be reduced during fruiting. Consistent humidity is important; waterlogging should be avoided. The mushrooms should be harvested young, as they are then especially mild and delicate in flavor.
