General Shitake Donko

The Shiitake Donko (Lentinula edodes, Donko variety) is considered a premium variety of the popular shiitake mushroom. Its thick, domed, and sometimes scaly caps are characteristic, developing slowly and thus producing a particularly intense aroma. Shiitake Donko is prized for its robust, spicy flavor, firm texture, and high content of valuable nutrients. This product provides you with top-quality Shiitake Donko mycelium for cultivating your own gourmet mushrooms.

Shelf life

The supplied mycelium can be stored for approximately 2–4 weeks when refrigerated (2–6 °C). Until use, cool, dry, and dark storage is recommended to maintain the mycelium's vitality.

Fruiting

Once the substrate is completely colonized by the mycelium, fruiting can be induced by a cold stimulus (e.g., brief soaking with cold water). The first shiitake donko fruiting bodies usually appear 10–21 days after the initiation of fruiting. Several harvest cycles ("bulbs") are possible.

Fertilization temperature

The ideal temperature for fruiting body formation is between 14 and 20 °C. A slight temperature difference between day and night promotes the development of particularly beautiful donko caps.

Mycel

The shiitake donko mycelium forms a strong, white to slightly brownish network of threads. It preferentially colonizes hardwood (e.g., beech wood), but also enriched sawdust very reliably and evenly.

Reproduction temperature

Temperatures between 22 and 26 °C are optimal for the mycelium to colonize the substrate. Within this range, the mycelium grows particularly vigorously and robustly.

Special features / tips Shiitake Donko

For shiitake donko, wood substrates are particularly recommended (beech or oak wood, wood chips, or enriched sawdust). Important: Ensure sufficient fresh air during colonization and fruiting, and avoid waterlogging and drafts. Shiitake donko require a short rest period after the first harvest before the next flush begins. The mushrooms should be harvested young and firm; then they are especially aromatic and have a long shelf life.
