General
The maitake ( Grifola frondosa ), also known as hen-of-the-woods or "dancing mushroom," is an extraordinary edible mushroom with a rosette-like growth habit. Its numerous, fan-shaped caps are grey-brown in color and resemble a leafy structure. The maitake impresses with its intense, savory-spicy aroma and subtle nutty notes.

Shelf life
The delivered maitake mycelium is fresh and active upon arrival. Stored in the refrigerator (2–5 °C), it generally keeps for several weeks. For best results, we recommend using the mycelium as soon as possible after receipt. Protect from direct sunlight and drying out.
Fruiting
Once the substrate is completely colonized, the maitake mushroom begins to produce fruit under suitable conditions. The first primordia usually appear after a period of cold or a temperature change. Harvesting takes place as soon as the typical, leafy rosettes have fully developed. Maitake preferentially fruit in flushes.
Fertilization temperature
The optimal temperature for fruit body formation is between 12 and 20 °C .
Mycel
The maitake mycelium exhibits vigorous, white to cream-colored growth and spreads evenly throughout the substrate. It is considered vigorous, but somewhat slower growing than many oyster mushroom species, rewarding growers with exceptional fruiting bodies.
Reproduction temperature
The ideal temperature for colonization of the substrate is between 22 and 26 °C .
